I think that if you are looking for a textured look that will not fall flat, a wax is your best bet. A gel will set quite hard and can either look wet or matt, but you cannot really play around with the style once it has set. A shiny wax will give you movement and you can change your style throughout the day, however if you use too much, it can fall flat. A matt wax is the best for texture and the style stays in for a long period of time.

V05 also has a cool matt wax, but it does build up on the hair, and can sometimes look flaky.
